Spiced Carrot Salad, Moroccan Style

The theme for Monday Posts in June is Salads.

All types of salads โ€“ although there are only 4 Mondays we shall try for variety.

The only similarity is that they will be โ€˜sideโ€™ salads, rather than main course salads. Those will come later.

Carrot Salads are very popular in France but this one is Moroccan style, not French style.

Spiced Carrot Salad, Moroccan Style

This is an easy salad that keeps well โ€“ great for picnics. Make it ahead so the flavors have plenty of time to come together.

Ingredients

Scale
  • 16oz (480gr) carrots
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp ground ginger
  • 1/2 tsp dried thyme
  • 3 tbs chopped parsley
  • 1 tbs fresh lemon juice
  • 1 tbs lemon vinegar
  • 2 tbs salad olive oil

Instructions

  • Cook carrots in boiling, salted water for 10 minutes.
  • When carrots are done, drain well but do not rinse.
  • Whisk remaining ingredients together in a deep bowl.
  • Add carrots, stir well and set aside to marinate for several hours at room temperature.

Notes

You can use more lemon juice in place of the lemon vinegar โ€“ or substitute cider vinegar.

  1. I donโ€™t think Iโ€™ve ever seen lemon vinegar! Iโ€™ll have to look for it because Jimmy loves carrots and I think this would be a winner for him.

    • Lemon juice would work but I saw the lemon vinegar and couldnโ€™t resist. Iโ€™m a sucker for interesting foods. lol
