The theme for Monday posts in April is Small Salads.
We love salads, both big (main course) and small (first course or light lunch).
When we first moved to this side of the pond bottled salad dressing was a rare (if ever) find. It’s gotten to be more available here but I’ve never gotten out of the habit of making my own. It’s just so easy and there are no unpronounceable ingredients in it.

PrintWarm Cabbage & Leek Salad
Winter cabbage meets spring leeks in this warm ‘change of season’ salads. Savoy or green cabbage works best for this.

Ingredients
- 1 medium leek, about 3oz (75gr), trimmed, sliced
- 2 cups shredded Savoy cabbage, about 8oz (225gr)
- 2 – 3 strips bacon, 2oz (55gr)
- 1/4 cup dry-cured, Greek olives, 12, pitted
- 1 tbs olive oil
- 1 tbs Balsamic vinegar
Instructions
- Sauté bacon in a medium skillet over medium heat.
- When brown and crisp, remove and drain. Pour off bacon fat if needed.
- Add olive oil, leeks and sauté, stirring frequently, until tender, 5 – 7 minutes. Add cabbage and sauté, stirring frequently, until it wilts and starts to brown.
- Add vinegar and Greek olives; stir well to combine.
- Crumble bacon and add.
- Reduce heat and let heat through, 3 – 4 minutes.
- Serve.
Notes
Cut the leek in half lengthwise, and rinse well – fanning the layers. discard outer layer.
Remove dark green outer leaves from cabbage. Cut off a thick slice, avoiding the core. Lay flat, cut into 3 or 4 wedges, then thinly slice the wedges.

Yum!! I just happen to have everything but the leek. I have to stop tomorrow for bread so I think this is on the menu tomorrow.
The sun is out, it’s 41 degrees…this must be mother nature’s April Fool’s joke. I imagine it’s going to snow again tomorrow.
Our weather has been all over the place, too – but not with your extremes, thankfully.
