Spinach & Strawberry Salad

The theme for Monday posts in April is Small Salads.

We love salads, both big (main course) and small (first course or light lunch).

When we first moved to this side of the pond bottled salad dressing was a rare (if ever) find. Itโ€™s gotten to be more available here but Iโ€™ve never gotten out of the habit of making my own. Itโ€™s just so easy and there are no unpronounceable ingredients in it.

Spinach & Strawberry Salad

Early spring salad with spinach and the seasonโ€™s first strawberries. For a first course or add a baguette for a light lunch.

Ingredients

Scale
  • 4oz (120gr) fresh spinach, cleaned, large leaves torn
  • 1 cup (4oz, 120gr) strawberries, topped, sliced
  • 1/4 cup (1oz, 30gr) sliced almonds
  • Honey Vinaigrette:
  • 1 tbs Balsamic vinegar
  • 2 tsp honey
  • 2 tsp Dijon-style mustard
  • 3 tbs salad olive oil

Instructions

  • Vinaigrette:
  • Put vinegar, honey, mustard into a small bowl and whisk well.
  • Slowly whisk in oil.
  • Put spinach into a large salad bowl.
  • Add vinaigrette and gently toss.
  • Arrange on 2 plates.
  • Top with strawberries, almonds, and serve.

Notes

Vinaigrette should be thick and well blended, no visible oil

  1. Nice and simple. Sometimes, thatโ€™s just whatโ€™s needed.

    My granddaughter had a rash in various places on her torso for weeks on end. It looked a lot like measles though of course, it wasnโ€™t. Thing 2 kept telling me she couldnโ€™t understand what was causing it and when I asked what the doc thought, she kind of ignored my question. About three weeks ago, I gave the baby a couple of cut up strawberries because โ€œshe loves themโ€ and within 45 minutes, she had a rash on her face. I told Thing 2 to stop feeding her strawberries. She didnโ€™t want to though I explained that if she stopped for a week, she might find that rash gone. Lo and behold, the rash disappeared! Did you know that included in the strawberry family is blackberries, apples, peaches, raspberries and something else? Because theyโ€™re not a true berry like a blueberry or cranberry. Theyโ€™re part of the roseceae family. She can eat a fresh apple, but not one thatโ€™s dried and reconstituted because itโ€™s too concentrated, I guess. So they have to have her allergy tested.

    I know, you didnโ€™t really need to read all of that, but I just found it interesting since your salad has strawberries, and theyโ€™ll find other fruit for her.

    • I would be devastated if I was allergic to fruitโ€ฆ. Being allergic to exercise is bad enough but I can usually control that if Iโ€™m careful. Fruit would be very sad.
      Strawberries are big here and this is the season. Theyโ€™re everywhere and so good, unlike the tasteless ones we got in the U.S. (except when I raided my uncleโ€™s strawberry patch)
