Bread Baking Babes Bake Bolo do Caco

I don’t know about you…. but I’m curious.

I see ‘caco’ and my mind immediately goes to chocolate, even though I know it’s not (cacao, not caco).

Elizabeth, of blog from OUR kitchen, and our host kitchen for this month, explains the term: this flatbread was cooked on a basalt stone over hot coals, which was called caco, hence its name.

It’s also known as Madeiran Tile Bread.

This bread (or these flatbreads) are a specialty of the Portuguese island of Madeira. Originally, they were cooked on the stones because regular people couldn’t have ovens and had to pay to use the ovens in the monasteries or castles.

They are now a popular street food as well as a staple with every meal.

They have sweet potato in the dough, white if available, because there was not a lot of grain available on the island. Or, maybe, because it made a nice, moist bread.

  1. My kiddo says I need to make more, that makes them a definite winner! She has enjoyed them both buttered and as breakfast sandwiches, both with scrambled and poached eggs. I really like the poached egg sammy! I will make them a little smaller next time for that purpose, English muffin sized.

  2. Kate, you really should demote my ultra round bolos lower down on your post displaying this really amazing bread. The other BBBabes’ bolos look exactly like the ones that are sold by our favourite Portuguese butcher.

    Ultra round bolos do taste really good though….
